Cauliflower Fried “Rice”

I love foreign food.  For some reason, I usually only crave Asian-style foods on the weekend.  I suppose it’s because I let loose a little on the weekends by eating out and not really tracking exactly what I’m eating like I normally do during the work week.  Nonetheless, sometimes you come across a food that is so delicious that you crave it every night for awhile.  This cauliflower fried “rice” was one of those foods.  It’s savory, filling, and something a little different for when you’re getting tired of the standard meat and veggies we so often cling to on Keto.  And the best part is that prep and cook time are basically nonexistent!


200g riced/crumbled cauliflower (I use store-bought for simplicity)

100g button mushrooms

40g broccoli

2T butter

2T soy sauce

2 large eggs



Slice broccoli and mushrooms into bite-size pieces.  In a non-stick frying pan, melt butter on medium heat.  Add crumbled cauliflower and 1 tablespoon of soy sauce to the pan and stir for 2 minutes.  Add broccoli and mushrooms to pan.  Add 2nd tablespoon of soy sauce and stir together for 2 more minutes.  Whisk eggs together and add to pan.  Stir until the egg is well-mixed with the vegetables.  Once the eggs are cooked, your dish is done!
