Spicy Pork Medallions with Steamed Broccoli

Pork.  It used to be Americans’ favorite meat back in the day before the beef industry took over.  Pork is cheap.  Pork is tasty.  Pork is life.  In the south, I grew up with pulled pork as my favorite meal in the whole wide world.  As an adult, I’ve found other ways to eat pork that are just as tasty.  As a Ketogenic dieter, I am fully aware of the abundant bacon memes online.  Any way you slice it (or cook it), pork is going to be delicious.

So, here you go:  a spicy pork medallion recipe for you to try.


200g pork tenderloin

180g broccoli

Slap Ya Mama White Pepper Blend seasoning


Freshly ground pepper



Heat a non-stick frying pan to just below medium-high.  Heavily sprinkle your favorite cajun/spicy seasoning all over the pork tenderloin.  Rub it down with your hands to create an even coating.  Place the pork onto the hot pan and sear each side until a light, brown crust forms.  Line a pan with aluminum foil and turn on the broiler.  Place the pork on the lined pan and put the pan onto the lowest rack of the oven.  Broil the pork for 15 minutes.

Broccoli:  Chop into bite-sized pieces.  Wash thoroughly and place into a microwaveable bowl.  Add 1 tsp water to bowl.  Cover with a lid or plastic wrap.  Microwave for 3 minutes.  Drain the broccoli and add salt/pepper to taste.
