I love cheesecake. I really, really do. Before Keto, I would get a cheesecake for my birthday. Luckily, I can still have cheesecake on this diet, and it’s even creamier and smoother without the added sugar. When I’m tired of dark chocolate, need to stay away from the peanut butter, and don’t feel like making a cinnamon omelette every night for dessert, this cheesecake fluff is my go-to. Super easy with only 4 ingredients, you can make a big batch at the beginning of the week and savor it each night as a dessert. Who loves cheese??? I DO!!!
It’s basically 2 parts cream cheese (not cream cheese spread) and 1 part sour cream. So, here ya go!
8 0z cream cheese
4 oz sour cream
8 splenda packets (or your favorite Keto sweetener)
1 tsp vanilla extract
Directions: Soften the cream cheese (let it sit out for awhile or microwave for 10 seconds). In a mixing bowl, stir cream cheese with a fork to soften it further. Add sour cream and mix together. Add sweetener and vanilla extract. Eat right away or allow to chill – it’s up to you!
